KIELBASA SOUP (gluten free/dairy free)
16 oz low-fat kielbasa/polish sausage (split in half length-wise,
then sliced)
6 oz dry split peas (1 cup)
6 oz dry pinto beans
(generous ¾ c.)
4 medium carrots, sliced
3 celery stalks, sliced
1
large onion, chopped
½ to 1 tsp. Thyme
58 oz chicken broth *
(approx 7 C. water to 10½ T. chicken broth mix)
1 can diced tomatoes
*Gluten Free: most canned chicken broth has wheat products in it.
Bouillon
cubes have MSG in them. I have found a tasty Blue Chip Foods
Product
called “GF Chicken Flavored Vegetable Soup Mix”
It is MSG, wheat,
and dairy free.
I have found it at Harmon’s.
Directions: Combine all ingredients (except tomatoes) in slow cooker. Cook on low setting for at least 6 hours, until beans and peas are tender. Add diced tomatoes, cook on high for 15 more minutes, and serve.
